Pantry Potatoes

What a wonderfully easy, and tasty, recipe to have on hand when needed! In the future I will likely reduce the butter so there is just enough to coat the potatoes, and may try to get them to crisp up a bit with higher heat or a longer cooking time or something... but they are great as is. Thank you! :)
