    Loved this recipe with my own changes. Hate celery so used chopped red and green pepper instead. used Rotelle tomatoes with peppers. I also used broth instead of water, gave it more flavor. I added a bit of cilantro paste and decreased the chili powder. With the red and green peppers and cilantro it gave a fresness. Of course I added cheese! It turned out great! Much like the spanish rice I made for my kids that they loved but I lost the recipe. I will continue to use this recipe.

    Paula’s Mexican Rice, This is a meatless rice dish. It is very good and pretty spicy., Loved this recipe with my own changes. Hate celery so used chopped red and green pepper instead. used Rotelle tomatoes with peppers. I also used broth instead of water, gave it more flavor. I added a bit of cilantro paste and decreased the chili powder. With the red and green peppers and cilantro it gave a fresness. Of course I added cheese! It turned out great! Much like the spanish rice I made for my kids that they loved but I lost the recipe. I will continue to use this recipe., used mild Rotel and cut back on the chili powder. I also added some cubed Velveeta after cooking, making this a very cheesy Mexican rice. This was easy and quick, and a welcome addition to refried beans and tortillas. With my changes the rice wasn’t spicy enough, so next time I’m using the full teaspoon of chili powder.

    Saut Onion, Butter, Celery.

    Add All Other Ingredients Except Cheese; Bring to Boil, Reduce, Cover and Cook Until Liquid Is Absorbed About 20 Minutes.
