    Pistachio-Goat Cheese Bites, These are delicious little nibbles. I love their simplicity–they are quick to put together and can easily be made on the spur of the moment for an impromptu gathering, but can also be prepared up to a day ahead. The recipe is adapted from one published in “In Style” magazine. Prep time includes 15 minutes refrigeration time., These are wonderful! I skipped the cream cheese and made these with goat cheese only I had a 10.5 oz pack of goat cheese which I didn’t want to go to waste. Brought the goat cheese to room temperature and rolled the balls by hand, which I thought may be faster than dropping them by spoonfuls. Also skipped the refrigeration step and rolled the little goat cheese balls in the chopped nuts and then put them in the fridge until we were ready to eat them. I can honestly say that this is my new favorite appetizer. Thank you!

    Toast Nuts in Small Skillet Over Medium Heat Until Fragrant, About 3 Minutes; Chop Finely.

    Combine Goat Cheese and Cream Cheese in a Medium Bowl. Drop Mixture by Heaping Teaspoons Onto a Parchment-Lined Baking Sheet; Refrigerate 15 Minutes.
