This is a great recipe for true pancakes! use brown sugar instead of white sugar (it makes the pancakes more flexible as opposed to white sugar making it a little more stiff, go figure-lol), and after I have added and mixed the wet to dry ingredients, I let it sit for about 10 minutes, then stir it again- it makes the batter really smooth, and that in turn makes a really smooth pancake. Love this recipe, thank you!

Pancakes, This is really a great recipe! It is fast, simple and you usually have the ingredients on hand I never use a mix! I got this from my sister years ago, and I have shared it many times , This is a great recipe for true pancakes! use brown sugar instead of white sugar (it makes the pancakes more flexible as opposed to white sugar making it a little more stiff, go figure-lol), and after I have added and mixed the wet to dry ingredients, I let it sit for about 10 minutes, then stir it again- it makes the batter really smooth, and that in turn makes a really smooth pancake Love this recipe, thank you!, So this recipe is really unclear and maybe because Im still not pro at baking, I dont get it as well First, I find the step of adding liquid to the beaten egg is strange Adding liquid to egg already beaten wouldnt make the air bubbles disappear? Two, how should I mix the milk and the eggs, and the batter with the flour? With a spatula or a whisk? Three, should the egg be in room temperature since we are beating whole egg? I tried this recipe twice The first time I tried it, the pancakes were very dense, I mixed the ingredients with a whisk and I made 6 pancakes The batter was very thick The taste was great, I reduced half amount of sugar and salt; however, it was dry and too dense to eat The problem could be the mixing used a whisk to mix the flour, using a whisk might over mixing it and create gluten to the flour so the product will be hard at the end The second time I reduced the amount of flour by less than 10g I might not beat the egg enough this time I didnt mix well the egg with the milk and butter because I was afraid by mixing it the egg with the liquids will damage the beaten egg Then, I added the flour and I got A LOT of bumps which didnt happen last time I also let it rest for 5 min and at the end I got a very liquid batter Its worst than last time because the pancakes were more dense I will try a third time and see if it works, if it doesnt Ill say goodbye to this recipe Seriously I would like to try different ways to make this pancake a several times, but with this amount of flour and butter, I dont have the stomach for them??
